Who wouldn't drool at the thought of red, velvety, cupcakes, topped with delectable swirls of cream cheese frosting!But if you thought all desserts sinful were meant only for the indulgents, here is the good news. Now you too can indulge in this festive favorite without toppling your diet. Here is a totally healthy (yeah you heard that right!) way of whipping up this moist, rich, and absolutely delicious red velvet cupcake at home in a few simple steps. Take note.
Ingredients
Egg White – 1 cup
Sugar - 3/4 cup
Red Beets – 1-cup (pureed)
Whole Wheat Pastry Flour - 1 cup
Ground Almonds - 1/2 cup
Baking Powder – 2 tsp
Cocoa Powder – 2 tsp
Buttermilk - 1/3 cup
Salt - 1/4 tsp
Method:
1. Preheat the oven to 175° C.
2. Cover 24 muffin cups with cupcake liners.
3. Whisk in egg whites and sugar together with a hand mixer for 2 minutes.
4. Mix in pureed beets and buttermilk and stir well.
5. In another bowl, mix baking powder, whole-wheat flour, ground almonds, salt, and cocoa powder and add it to the egg mixture and mix again.
6. Spoon the batter in the muffin cups and bake until al dente. This would roughly take around 18 to 20 minutes.
7. Allow to cool down and then transfer them on a wire rack.
8. Top it with whisked frost cheese and your favorite berry.
