What is life is full of care, where you don't have the time to scarf down a warm slice of fruit cake, forget baking one for yourself! After all, very few things in life can beat the delight of chowing down a rich, fruity, nutty, deeply flavored fruit cake during tea time.
Well, if you have a distaste for fruit cakes, then possibly our recipe will change your minds for good. Our recipe of the good old cake has all the fruitiness as you would expect from any good fruit cake, and is light and very, very delicious too.Note the recipe and get making. Happy baking!
Ingredients
Refined flour (maida) - 2 cups
Mixed dried fruits,chopped -1/2 cup
Tutti frutti,chopped -1/2 cup
Candied peel,chopped -1/2 cup
Eggs -3
Brown sugar -1 cup
Baking powder -1/2 teaspoon
Baking soda -1/2 teaspoon
Cinnamon powder -1/2 teaspoon
Buttermilk-3/4 cup
Oil -1/2 cup
Honey-1 tablespoon
Method
Preheat oven to 180 °C.
Break eggs into a bowl and beat with a hand blender. Add brown sugar and continue to beat till sugar dissolves.
Sift refined flour, baking powder, baking soda and cinnamon powder into the egg mixture and mix lightly.
Add buttermilk and mix with the blender. Add oil and blend again.
Add tutti-fruity, candied peel, cashewnuts-raisins and mix with a light hand.
Add honey and mix.
Pour the batter into a silicon cake mould and bake in the preheated oven for 45 minutes. Let it cool before demolding.
Cut into thick slices and serve.
