Chocolate Chips and Mango Muffin is a prefect healthy and tasty muffin recipe. This muffin gives a nice flavor in every bite. This is a wholesome muffin recipe which has a nice flavor of mango and a nice crunch of chocolate chips. This muffin can be very easily available ingredients in your kitchen. This muffin can be packed in your kid’s snack box.
Ingredients
- 16 tsp chocolate chips
- 4 tbsp mango pulp
- 1 cup plain flour (maida)
- 1/2 tsp baking powder
- A pinch of soda bi-carbonate
- 1/2 cup condensed milk
- 4 tbsp melted butter
- A few drops of vanilla essence
Directions
1. In a bowl, add the plain flour, baking powder and soda bi-carbonate and keep it aside.
2. In a bowl, add condensed milk, mango pulp, butter and vanilla essence and mix it well.
3. Combine the flour mixture and the condensed milk mixture and fold it gently with a wooden spoon or spatula.
4. Add 2 tbsp of water, mix it well to get a batter of dropping consistency and place 8 paper cups in 8 muffin molds of a muffin tray.
5. Drop spoonful of the batter into each muffin mold and tap it lightly and sprinkle 2 tsp of chocolate chips evenly on each muffin mold and bake in a preheated oven at 200°c (400°f) for 15 minutes or until a toothpick inserted in a muffin comes out clean.
6. Once baked, remove it from the molds and serve it and relish its flavors and taste.
