Veg dish, Cabbage fried rice!

Spiced Indian style cabbage fried rice is a good lunch option in busy lives. The dish is combined with Indian spices, and has mild flavor. The dish is quite different from the casual Chinese veg fried rice with a unique taste. Give it a try!

Preparation time:  40 mins

Cook time:  20 mins

Total time:  1 hour

Serves: 3-4

Ingredients:

1.200 grams heaped basmati rice, rinsed and soaked in water for 30 minutes

2.Water for pressure cooking rice- 1.5 cups

3.Salt -1/4 tsp

4.Oil- 2.5 tsp

5.Cumin seeds- 1tsp

6.Cinnamon- 1 inch

7.Green cardamoms-2

8. Cloves-2

9. Indian bay leaf-1

10.Medium onion-1 (chopped)

11.Medium tomato-1( chopped)

12. Ginger garlic paste-1 tsp

13. Green chilies-3 to 4(sliced)

14.Cabbage - medium(shredded)

15. Turmeric powder-1tsp

16. Red chili powder-1/4 tsp

17.Garam masala powder-1/4 tsp

18.Coriander powder½ tsp

19.Salt - required

20.Coriander leaves or mint leaves for garnishing

Procedure:

1)Rinse 1 cup (200 grams) basmati rice in running water for 3 times, soak it for 30 minutes in water.

2)Place  the rice in a pressure cooker with 1.5 cups water and ¼ tsp salt.

3) For 2 to 3 whistles pressure cook the rice on medium flame, and after pressure comes down, open the lid and fluff with fork and keep aside.

4)Now place the pan with oil on medium flame, add the Spices- cinnamon, cloves, cardamoms, cumin seeds, and Indian bay leaf and saute until they splutter and turn fragrant.

5) Add chopped onions, green chillies, Ginger garlic paste stir and saute the  mixture and wait for the color change of onions.

6) Wait until the raw flavor of ginger garlic goes away and now add chopped tomatoes and stir well.

7)Later add turmeric powder, red chili powder, garam masala powder to the mixture, stir and saute until tomatoes become pulpy.

8)Add shredded cabbage.

9)On a medium flame mix the cabbage with masala and salt until it becomes translucent.

10) Finally, add the coriander powder to it and add the cooked rice.

11) The cabbage mixture gets combined with rice gently. Saute 3-4 times the whole mixture and garnish with coriander/mint leaves.

12) The cabbage rice is ready to serve.
