As the name suggests, breaking your fast with healthy and nutritious food is quiet essential to have a great day and good health for longer period of time. If you thing about a simple Indian breakfast recipe, the first thing that comes into mind is upma. Instead of traditional rawa upma, consider trying oats upma. Taking such a fantastic food early in the day keeps you healthy, besides making you enjoy the delicious breakfast mixed with vegetables.
Ingredients
Quick cooking oats: 1 cup
Oil: 1 table spoon
Onion: chopped 1/4 cup
Carrots chopped: ¼ cup
French beans chopped: ¼ cup
Green peas: ¼ cup
Curry leaves: 7-8
Mustard: 1tsp
Jeera: 1tsp
Chana: 1 tsp
Cashew nuts: few
Ginger: ½ tsp chopped
green chilies: 3 chopped
Coriander: little
Water: 2.5 cup
Ghee/ oil: 1.5 tsp
Salt for taste
Preparation method:
• Cook oats in ½ tsp hot oil. Saute till oats turn crisp. Remove oats and keep aside.
• Heat remaining oil in the same pan, add mustard, jeera, chala, casheus. Add onion and fry for a minute.
• Add ginger, green chilies and curry leaves and sauté for a minute.
• Add all vegetables and sauté for 2 minutes.
• Add water and cover the pan for veges to get cook.
• Add roasted oats stir lightly then add salt for taste. Stir well.
• Cover the pan so that oats steam for 10 minutes.
• Add coriander leaves on top after oats upma gets ready.
